These little heart breakers are just what the doctor ordered for cheering up your girlfriends after breakups, for cutting in half and sharing with your BFF, or just for bad days. Nothing makes me feel better than baking, when all else goes wrong in the world I know I can be sure these will come out exactly as they should.
These are easy and fast, but so impressive your friends will ask which bakery you got them from. Package them in a fancy bakery box, and with a wink and a smile and say “The Bakery of (enter your name here) .”
Makes 16 scones.
- 2 1/4 cups un-bleached Organic Flour
- 3/4 cup cocoa powder
- 1/2 cup light brown sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 vanilla extract
- 5 tbsp unsalted Butter
- 1/2 cup unsweetened apple sauce
- 3/4 cup Greek yogurt
- 1/4 cup milk (I used almond milk)
- 4 ounces of good quality dark chocolate chopped or in chips
- Organic strawberry jam
- 16 white chocolate chips (optional)
Preheat your oven to 375 and line a cookie sheet with parchment paper.
Whisk flour, cocoa powder, sugar, baking powder, baking soda and salt together in a large bowl or in a counter top mixer. Cut up the butter in small pieces and then add to the flour mix and work with your fingers until they are small as pees.
Slowly add in the apple sauce, Greek yogurt, milk, vanilla and the chocolate chunks until just combined.
Put some flour down on a clean surface, squish and mold the dough into a 1 inch thick slab of dough.
Use a heart shaped cookie cutter (or any shape you like) to cut out the scones. Place on a prepared cookie sheet, then use your thumb to press a well into the center of the scone. Make it big enough to hold 1 teaspoon of jam but make sure you don’t go all the way to the bottom.
Bake for 15-17 minutes, until they are firm to the touch but sill slightly bounce back. Let cool on the cookie sheet (this helps to keep them cooking) for 5 minutes.
