The other day my daughter and I had a picnic to go to, so I thought to myself “what food do all kids love?” Hot dog was the first thing I thought of, and because these are little kids, Healthy Pigs in a Blanket were both fun for me to make and fun for them to eat.
I was inspired by Nigella Lawson’s traditional recipe in her fabulous book Nigella Bites, so I worked on it and cut the calories in half. Along with the Piggies in Blankets I brought along my Pineapple and White Chocolate Cupcakes, and a bottle of Chardonnay of course. Happy Picnicking!
Makes 48 Healthy Pigs in a Blanket.
- 2 packs of Chicken Hot Dogs (8 per pack)
- 2 cups Self-Rising Flour, plus more for rolling out
- 1 tsp Salt
- 2 tbsp Cheddar Cheese finely grated
- 1 cup Unsweetened Almond Milk
- 2 large Eggs
- 3 tbsp Olive Oil
Preheat the oven to 425 and cover two lined baking sheets with Parchment Paper.
Cut the hot hogs into thirds and set aside.
In a standing mixer or a large bowl combine flour, salt and cheese. In a separate bowl combine Almond milk, oil and one egg (save the 2nd egg for later) beat well. Combine the wet ingredients to the dry ingredients and mix, you may need to add a little more flour as you mix you want the dough to be slightly sticky but not too sticky that you can’t roll it out. Move ½ of the dough to a clean surface covered in flour, cover a rolling pin with more flour and roll out the dough to a large square. Slice with a pizza wheel down the middle once and vertically 12 times, roll up the hot dogs, set on baking sheet and roll out the rest of the dough and repeat with the rest of the hot dogs. Now beat the left over egg with a little water and a pinch of salt and brush the tops lightly with egg wash.
Place the Healthy Pigs in a Blanket in their blankets into the oven and bake for 12-15 minutes until golden brown. If bringing to a picnic or a party, place in Tupperware, in between the layers place a piece of the parchment paper you already used, reduce, reuse, recycle.
