How to Make Vegan Quesadillas
These avocado quesadilla have long been a reader favorite here at Lose Weight by Eating! In this article we gave them a makeover, adding in chunky salsa. It adds a ton of flavor and requires no cooking!
And we lean on the healthy avocado to lend it’s creaminess, so we don’t need as much cheese (or really any at all!) to get a perfect recipe for veggie quesadillas.
How to Make Avocado Quesadillas:
- Heat a large skillet over medium heat, spray with olive oil.
- Add the tortilla to the hot pan, add 1 tablespoon of cheddar cheese to one side. Top with avocado, Pico de Gallo, and then the remaining cheese.
- Fold the empty side the the tortilla over the top and cook until the cheese starts to melt.
- Flip the quesadilla and cook until golden brown. The cheese will be melted and may spill out a bit… this is great!
- Move the veggie quesadilla to a plate, cut into 4 triangles and serve hot.

We supplied you with a homemade Pico De Gallo recipe below. But you can absolutely pick some up at the store. Look for the fresh stuff, in the produce refrigerated section for the best flavor.
Veggie Quesadillas (4 INGREDIENTS)
Equipment
- Olive Oil Spray optional
- large skillet
Ingredients
- 1 10-inch tortilla
- 2 tablespoons vegan cheddar cheese or cheddar cheese for vegetarian
- ½ avocado mashed
- ¼ cup Pico De Gallo (store-bought or homemade)
