I love healthy spicy food, and these Skinny Jalapeno Poppers with Dip provide the crispness your palate needs after a hot, delicious bite, and the cool Cilantro Greek Yogurt dip pairs perfectly with them. I like to pair this recipe with a crisp, white wine. Albarino is ideal, however Pinot Gris, Viognier and Roussanne also go well with spicy food and especially these delicious Skinny Jalapeno Poppers.

This “skinny” version of a Jalapeno Popper was inspired by stuffed bell peppers. Instead of battering and frying these peppers, I halved, stuffed and topped them with a crisp cheese topping.

A note on making these Jalapeno Poppers hot, medium or mild- All the “heat” from these peppers is in the seeds and the ribs –the white innards of the pepper.- If you remove all the seeds and all the ribs you will have a mild stuffed jalapeno, leaving ½ the ribs will make them medium and most of the ribs hot.

Makes 8 Jalapeno Poppers-

Ingredients for Jalapeno Poppers:

  • 4 large jalapeno peppers
  • 4 tablespoons soft cream cheese
  • 1/8 cup finely shredded cheddar cheese
  • 1/8 cup Panko bread crumbs

Ingredients for Jalapeno Popper Dip:

  • 1/4 cup Greek Yogurt
  • 1/8 cup almond milk
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon salt
  • 2 tablespoon fresh cilantro
  • Sprig of fresh dill
  • 1 teaspoon parsley

Get started:

Jalapeno Poppers with DipPreheat oven to 425 degrees. Slice the jalapeno peppers in half, length wise. Use a paring knife to remove the seeds and ribs. Place the jalapeno peppers on a baking sheet and bake in the oven for 5 minutes. Remove jalapeno halves from oven and set aside to cool slightly. In a small bowl combine cheddar cheese and Panko breadcrumbs, then start stuffing the jalapenos. Add ½ a tablespoon of cream cheese to each half, then top with cheddar Panko mixture. Place back in the oven for 15 minutes, serve hot or room temperature.

For the Jalapeno Popper Dip, combine all ingredients in a blender or food processor and blend until smooth.
