These melt in your mouth brownies are the perfect balance between chewy outer crust and the fudgey center. I had a wonderful time testing recipes, and I finally knew I hit the jackpot with this recipe. They are so delicious they seam too good to be true!! Make them yourself and then die and go to chocolate heaven all for under 200 calories.
I added a list of “add ins” for these brownies, although I assure you they don’t need anything to make them more amazing, this just gives your an unlimited amount of combinations.
Makes 16 brownies-
1/4 cup unsalted butter at room temperature
3/4 cup dark brown sugar
1 cup semi sweet chocolate chips
2 large eggs
1/2 cup Greek yogurt
1 cup flour
3/4 cup unsweetened cocoa powder
1 tsp baking soda
1/8 tsp salt
1 cup unsweetened almond milk
OPTIONAL ADD INS- Handful of white or dark chocolate chips, dried cranberries, almonds, walnuts, dried coconut, 2 tbsp peanut butter.
Preheat oven to 350 and using the inside of the butter wrapper rub butter on the inside of a 9×9 casserole dish.
In a large bowl or standing mixer add the butter and brown sugar, set aside.
In a microwave safe bowl heat the chocolate chips in the microwave in 10 second increments stir in between each 10 second increment until all melted.
Add the melted chocolate to the butter and brown sugar and mix until all incorporated. Add each egg one at a time and mix until incorporated then the Greek yogurt.
In a separate bowl combine the flour, cocoa powder, baking soda and salt. Alternate adding the flour mixture and the almond milk to the wet ingredients, starting and ending with the flour mixture and just until combined.
If you have chosen any add ins, with a rubber spatula fold in. Scrape the brownie batter unto a casserole dish and even out.
Place in the oven for 35-45 minutes, you know they are done when the sides pull away from pan and the center resists pressure. Let cool for 1 hour before cutting into 16 squares.
