My Pumpkin Oatmeal Cookies are a huge hit so with the holidays coming I thought it would be the perfect time to jazz them up. I love the chocolate chips and pecans in these cookies, they give it two new textures and more depth in flavor.
Makes 30 cookies.
- 3/4 cup white flour
- 1 cup brown sugar
- 1/8 teaspoon salt
- 1/2 teaspoon baking soda
- 2 tablespoons unsalted butter- room temperature
- 1/2 cup pumpkin puree
- 1 teaspoon vanilla
- 1 egg
- 2 cups steel cut oats- or old fashioned
- 1/4 cup semi-sweet chocolate chips
- 1/4 cup pecans
- 2 cups powdered or confection sugar
- 2 tablespoons pumpkin puree
- splash of vanilla
- 1/4 teaspoon pumpkin pie spice
- 2 tablespoons pecans
Preheat oven to 350 degrees.
Combine flour, sugar, salt and baking soda in a medium bowl.
To the flour mixture add butter, pumpkin puree, vanilla, and egg and mix together.
Slowly add in oatmeal and mix until just combined.
Spoon out tablespoon sized cookies onto a cookie sheet and place in 350 degree oven for 15 minutes.
Let cookies cool before adding frosting.
Whisk together powdered sugar, pumpkin puree and vanilla until desired constancy, add warm water a teaspoon at a time if needed to thin it out.
Dip or drizzle onto cookies and let set for 10 minutes, place in refrigerator for 30 minutes to allow the frosting to set.
