Orange Dream Parfait- 250 calories

Not only is this sinfully delicious, it is sinfully easy to make too! I used Cherry Almond Biscotti cookies, but you could use any crunchy cookie. Try to get an Organic jam for this, usually you can get some great organic jams at local Farmer’s Markets, otherwise Trader Joe’s, Henry’s or even your local grocery store can hook you up.

I love this for breakfast, but you can also wow your friends with this for dessert, just cut the quantity for dessert, it is very filling.

Makes 2 Breakfast Parfaits, or 4 Dessert Parfaits-

  • 2 cups Greek Yogurt
  • 4 tbsp Organic Sweet Orange Marmalade
  • 2 tsp Honey
  • 2 Cherry Almond Biscotti
  • 2 Clementines (Cuties) or Tangerines peeled and segmented

Place cookies in a Ziploc bag and with a rolling-pin (or baseball bat if you’re a bad ass) roll, bash and obliterate the cookies. Pick out the dried cherries, these are what I like to call a “Chef’s Treat” for you to nibble on, or share with hungry kids. Set crushed cookies aside.

In a medium bowl combine Greek yogurt, Orange Marmalade and Honey, mix well.

In 2 clear glasses (or 4 champagne flutes if a dessert) fill 1/2 way full with yogurt mixture, then top with 1/2 of the cookie crumbs and place 2/3 of the clementine segments around the edges. Top with the rest of the yogurt, then the rest of the cookies and then the rest of the clementine segments, see picture or make your own design. Now you’re ready to eat, lucky you!!
