Meatloaf Parmesan and Rosemary Potatoes

This is an easy meal, just some quick chopping and mixing and your done. Great for a dinner party or to impress your in-laws. It pairs well with a bold red wine, Cabernet and Merlot are fantastic. What you will need to feed 6-

Meatloaf:
1 onion diced
3 cloves Garlic finely chopped
1 tbsp Olive Oil
1 LB lean ground beef
2 eggs
½ cup Parmesan or Romano cheese, or a combo of the two
¾ cup bread crumbs
2 roasted red peppers chopped
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar
2 tablespoons Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 cup marinara sauce
¼ cup Mozzarella cheese

Potatoes:
6 medium potatoes cut into bite sized pieces
1 tbsp olive oil
3 garlic cloves chopped finely
handful fresh rosemary chopped finely
salt and pepper to taste

Pre-heat oven to 350, oil (cooking spray is fine) a loaf pan and a rimmed baking sheet.

Put oil in pan, heat on med-high and add the onions cooking for 5-10 min until soft. Toss in the garlic and cook for another 5 min, remove from pan to a plate to cool. While the onions and garlic cool put everything else in a large bowl, hold the marinara and Mozzarella back though. Once the onion mix is cool add to the bowl and mix with your hands until just combined, don’t over mix it will make the meat tough. Mold into an loaf pan, top with marinara sauce. Set aside while you get on with the potatoes.

Toss the potatoes, garlic, rosemary and oil in a large bowl and use your hands to mix together. Spread out on baking sheet and sprinkle with salt and pepper. At this point you can place both items in the fridge and go about your day, just take out 30 min before you pop in the oven so it all gets close to room temp.

Both the meat loaf and potatoes go into the oven for 50-60 minutes, after about an hour take out the meatloaf, top with mozzarella and put back into oven and broil at 400 for 3-5 min, watch so it doesn’t burn.

Take out meatloaf and let it rest for 10 minutes, if the potatoes are browned you can just turn off the oven and crack it open, if not let them brown up a little longer. Time to plate and serve.

One word on using your hands in the meat, I use to be squeamish about sticking my hands in ground meat, but the great Nigella Lawson once said on her cooking show “If you are squeamish about sticking your hands in meat it means you are essentially afraid of your food” so be a big boy or girl and get over it, because soon I will give you a recipe for my famous meat balls.
