Cranberry-Orange Crusted Salmon- 290 calories

Serves 4-

  • 4 salmon fillets
  • Salt & pepper to taste
  • ½ cup walnuts, finely chopped
  • ¼ cup dried cranberries, chopped
  • 2 Tbsp. butter, melted
  • 2 Tbsp. parsley, chopped
  • 1 Tbsp. Dijon mustard
  • 1 tsp. orange zest

Preheat oven to 375⁰. Grease baking sheet; season both sides of salmon fillets with salt & pepper. Arrange fillets on baking sheet. In small bowl, combine remaining ingredients; mix thoroughly. Press mixture onto salmon fillets. Bake 20 minutes, until topping is lightly browned. Do not turn fillets over.

Serves 4,  with 290 cal per serving
