As noted above, you can use any ground meat you prefer in this recipe. We love bison (also known as buffalo) as it has fewer calories and less fat than beef. Plus it has more protein and tastes exactly like beef when cooked in a burger.

How to Make Blue Cheese Buffalo Burgers
There’s a trick to making flat burgers… you add a dimple to the middle so they don’t become round and bloated in the center.
This trick works for both grilling and stovetop cooking of burgers. And on all meats, try it yourself and finally have flat burgers.
How to Make Blue Cheese Burgers:
- Heat a grill to high heat and spray the grill grates with olive oil. (Alternatively, heat a grill pan over high heat and spray it with olive oil.)
- Make four patties from the meat. Push your thumb into the center and create a little dimple on both sides. This will help the burger cook more evenly and keep a flat patty shape. Gently sprinkle the patties with salt and pepper.
- Grill the burgers for 7 to 10 minutes, flipping once. Transfer the burgers to a large plate, top with blue cheese and let them rest for 5 minutes.
- To assemble the burgers, add some arugula to each bottom bun, top with a burger patty and optional toppings. Then add the top buns on the burgers and serve.

- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup blue cheese
- 4 whole wheat buns
- 1 cup arugula
